Avocado and Harissa paste on toast

Harissa Paste lightly spread on toast with avocado...

For a light snack or brunch, I often have avocado on toast - it is simple, quick and wonderfully nutritious.  But sometimes there is a need to spice it up!  Recently I came across this Daphne Oz recipe, and so discovered that there is no better way to do this than with some harissa paste.

As I open my jar of harissa paste (this one was Sainsbury's Specialty Ingredients Harissa paste), the aroma that is released is intoxicating - and no wonder, for the contents are an exotic blend of rose petals, red peppers, smoked paprika, cumin, coriander and caraway.  What a delicious way to add some smokey, spicy flavours to avocado.

Use any type of bread you like, and add as much or as little harissa paste as you like!

Avocado & Harissa on Toast

Serves 1

1/2 avocado, sliced or mashed

Harissa paste
1 slice of rye bread, toasted
Freshly ground black pepper

Spread toast with the harissa paste.  Top with the avocado, gently pressing it into the toast.  Season with pepper.

Thank you to Sainsbury's for sponsoring Harissa paste.
