Easy Broad Bean Mange Tout Salad

It's that time of the year again, when Broad Beans are in season.  Toss up a salad with these flavoursome beans along with other freshly picked homegrown vegetables that are in season like lettuce, mange tout and spring onions.

Broad beans, removed from pod
Mange Tout (Snow Peas), sliced thinly
Spring Onions, chopped finely

Salad Dressing Ingredients
Extra Virgin Olive Oil
Balsamic Vinegar
Dash of Fish Sauce or Soy Sauce

1.  Boil the broad beans for about 3 minutes.  Remove from water, and immerse in cold water to refresh.  Next, squeeze the beans out of their outer skin.

2.  Mix together the salad dressing ingredients.

3.  Place all the salad ingredients in a bowl, and toss together with the salad dressing.  Add salt and pepper to taste.

Serve as an accompaniment to fish or meat.
