Stir Fried Pea Sprouts (Qing Chao Dou Miao)

Pea Sprouts (Dou Miao) are one of the most delicious vegetables that can be stir-fried and are considered to be a Chinese delicacy. Nothing could be better than fresh homegrown pea sprouts, and if you haven't tried this you MUST!! They are incredibly easy to grow and once you have harvested them, they grow back within a few weeks.

* 2 cloves of garlic (Peeled and then either minced or very finely sliced)
* 1 tablespoon oil (such as Canola, Vegetable or Sunflower but probably not Olive oil since the flavour is a little too strong)
* Couple of handfuls of freshly harvested Pea Sprouts
* Sea salt

Cooking Instructions:

1. Heat the oil in a wok over a medium-high heat

2. Add the garlic to it (which should start sizzling but not burn - if it starts going brown and crisp then the oil is too hot!)

3. Add a pinch of salt (I add the salt to the hot oil rather than at the end, as I think it flavours the oil and as a result the vegetables, which end up being consistently flavoured)

4. Throw in the pea sprouts and toss for a further minute or two until just wilted

Remember: You don't want to overcook them!
